Summer is finally here and I’ve been looking forward to making fresh bruscetta again. I got my recipe from Chicago prop man Bob Volpe, who I worked with on Early Edition, a television series shot in Chicago in the 90’s, starring Kyle Chandler, Fischer Stevens and .
Bob would bring homemade bruscetta to set every once in awhile and it was a real treat when he did. His bruscetta was beautiful. It consisted of extra virgin olive oil, fresh, San Marzano plum tomatoes, roasted garlic, fresh basil, diced white onion, a hint of red wine vinegar, salt and fresh cracked black pepper. That’s it. It’s easy to make but hard to get the ratio of those simple ingredients just right.
I never made a post featuring the tomatoes from those seeds and plants pictured above so I’m adding this photo long after these tomatoes were eaten.
